Hello, I’m Natalie
Natalie Hayllar is an Accredited Practising Dietitian (APD) and the founder of Santé Logic, offering personalised one-on-one nutrition consultations alongside food, nutrition and communications consulting for organisations.
Her clinical work focuses on general nutrition counselling, supporting people to navigate the often-confusing world of food with clarity, confidence and practicality. Natalie works across a broad range of needs, with specialist interests in women’s health (including peri- and menopause), lifestyle medicine, sports nutrition, and nutrition support during cancer treatment and recovery. Her approach is evidence-based, compassionate and realistic, supporting sustainable change that fits real lives.
Natalie blends nutrition science with culinary insight, food culture and behaviour change, recognising that what we eat is shaped not only by health needs, but by habits, emotions, social connection and enjoyment. Early in her career, she worked as a clinical dietitian in oncology at St George Hospital in Kogarah — experience that continues to inform her empathetic, practical approach to cancer nutrition support.
Alongside her clinical practice, Natalie brings three decades of experience in food and nutrition communications, strategy and consulting. She has worked across FMCG, agency, media, publishing and not-for-profit sectors, helping organisations translate complex nutrition science into clear, credible and engaging communication.
Natalie holds university qualifications in psychology, nutrition and dietetics, and marketing, positioning her at the intersection of health, behaviour and food communication. She has also undertaken sports nutrition training with Sports Dietitians Australia and recently completed advanced studies in Culinary Nutrition at Australian Catholic University (ACU), including immersive study in Rome exploring food culture and conviviality, hoping to one day soon complete a PhD in this space.
Outside of work, Natalie is a mother of two very active teenage surfer boys, holds a first-degree black belt in Taekwondo, and is a passionate advocate for women in martial arts and self-defence. She balances clinical work and consulting with time in the dojo, a love of food-focused travel, reading (particularly historical and romance fiction), film, and a lifelong appreciation of French and Italian food and culture shared via Eat Read Love.
